Chef Felipe Bolivar is the Executive Chef of The Lobby Bar at Quirk Hotel in Richmond, Virginia, where he leads a culinary program centered on European bistro-inspired cuisine, seasonal Virginia ingredients, and vibrant flavors influenced by his Peruvian heritage. A Washington, D.C. native, Bolivar has built his career in acclaimed kitchens including Iron Gate in Washington, D.C., and The Roosevelt in Richmond before returning to Quirk Hotel in 2020. Since taking the helm of The Lobby Bar, he has helped shape the restaurant’s creative, shareable dining concept, emphasizing approachable sophistication, hospitality, and ingredient-driven cooking. His menu reflects a balance of refined technique, regional sourcing, and bold flavors, earning recognition for transforming The Lobby Bar into one of Richmond’s distinctive dining destinations

Kaelyn Bishop is the Director of Food & Beverage at Quirk Hotel in Richmond, Virginia, where she oversees the hotel’s food and beverage operations, including The Lobby Bar, Q Rooftop, banquets, catering, and special event programming. Having spent nearly a decade growing her career with Quirk Hotel, she advanced through multiple leadership roles before being appointed Director of Food & Beverage in 2024. Known for her passion for hospitality, event curation, and guest experience, Bishop focuses on creating engaging programming that connects hotel guests with Richmond’s vibrant culture while fostering a welcoming environment for the local community. Her leadership encompasses team development, operational excellence, financial management, and cross-department collaboration, helping position Quirk Hotel as one of Richmond’s premier lifestyle hospitality destinations.
